Salmon with Lemon and Dill

To Preserve Juiciness

When broiling or pan-broiling meat, salt each side after it has cooked, not before. Salt draws moisture out of meat when it is added before cooking. It also inhibits browning.
Use tongs to turn steaks; do not pierce them with a fork, and do not flatten them, which will cause the flavorful juices to run out.
