GARLIC VINAIGRETTE DRESSING

 

Yields ¾ cup.

 

INGREDIENTS

 

   *1/4 cup red wine or tarragon vinegar

   *2 tablespoons Dijon mustard
   *1/4 teaspoon salt
   *freshly ground black pepper

   *2 to 3 large cloves garlic, minced

   *1/2 cup olive oil

 

DIRECTIONS

 

         Combine the vinegar, mustard, salt, pepper, and garlic. Beat in the olive oil gradually with a fork or whisk until the mixtures emulsifies. To make this dressing in a blender, mix all the ingredients together and blend at high speed for several minutes. Note: Only whole fresh garlic cloves will create the desire intensity in this dressing.
